It definitely helped that we had the foresight to secure a reservation weeks in advance… and this morning, as if Lyon itself wanted to applaud the effort, Lori and I woke up to a snowfall, something neither of us has seen in years. The city felt like a snow globe.

From there, we made our way to lunch at the Michelin 1-star Restaurant Guy Lassausaie, a choice driven entirely by my admiration for the chef’s creativity. And he did not disappoint.

Each course was thoughtful, expressive, beautifully composed, and most importantly, very tasty.

- Truffle surprise with foie gras, spiced brioche

- Soft-scrambled egg with lobster, American-style emulsion

- Herb salad tartine and lobster roulade with olive oil from Les Baux

- Scallops from Port-en-Bessin sautéed in brown butter

- Butternut squash ravioli and pumpkin velouté with lemongrass and ginger

- Steamed fillet of barbel, watercress and ginger iodized emulsion, knife-cut tartare of Jerusalem artichoke and caviar

- Free-range Bresse capon breast cooked in hay, stuffed leg with horn-of-plenty mushrooms, short jus with Malabar pepper, chestnuts, salsify

- Truffled Brie

- Clementine salad with saffron, clementine sorbet and sesame tuile

- Small Ardèche-style Yule log, ice cream and candied chestnuts
