Day 42 of 60 | Bonjour, Paris! 🇫🇷✨

As we close out the week, something wild is happening…I’m actually starting to feel more and more comfortable in a professional French kitchen. (I know. I’m suspicious too.)

Every day the techniques get a little sharper, the panic gets a little quieter, and the plating?

Well… that’s still my favorite part of the whole journey. Give me a blank plate and some ingredients and suddenly I’m like a Parisian abstract artist who traded paintbrushes for tweezers.

Today’s creations?

Let’s just say we got a little adventurous.

Dish #1: A beautifully crisp white fish nestled on a silky sauce, complete with a charred leek (not burnt - recipe called for charred) that looks like it just returned from a dramatic solo performance in a bonfire. The textures, the colors, the contrast… I had a lot of fun with this one.

Dish #2: A delicate, earthy mushroom foam with paper-thin slices of mushrooms and apples layered like a culinary sculpture. Light, airy, a little mysterious… basically the dish equivalent of a French poet.

We’re learning, we’re improving, we’re plating, and we are definitely eating well.
