Last night was a very special evening. After eight months of breakneck renovations, intense fundraising and team wide sacrifice, we conducted a practice run before we officially open this coming 4th of July.
Yours truly managed the pre-dinner tequila tasting experience. It was a big hit! I need to remember NOT to have one with every guest! 🤣 Sooooo good!
The night was owned though by our new Master Chef Owner Edward Delling-Williams. Edward took time off from running one of the best new restaurants in France, and from his TV appearances as a celebrity chef in Europe, to create our seasonal menu and fly out to teach us how it’s done. His performance in the kitchen was like watching Michael Jordan play basketball back in the day.
Our local Reisident Chef Abby Jane Wiltse spent the week with Chef Edward experiencing a master class. She has the toughest job of all, taking over for Chef Edward delivering his creative menu to our hotel guests once he returns to Paris. At the end of the night, she looked me in the eye with confidence, and uttered the one thing I needed to hear, “Eric, I got this!”
Thank you to the local volunteers who allowed us to practice on them last night. We have a new group of ten tonight with some vegans in the mix. It will be our last practice before the real thing next weekend.
The entire experience was pure magic!
