once you've been through chef school, you never quite eat the same again.

I woke up this morning in Phoenix, Arizona … and I’m going to bed tonight in Champagne, France. ✨🍾

After an incredible 60 days in Paris, we rented a car, pointed it east, and officially closed that chapter of our journey. Tonight was date night at the legendary Domaine Les Crayères, a five-star château hotel tucked into the heart of Reims in Champagne.

Dinner was at Le Parc, the hotel’s two-Michelin-star restaurant helmed by a chef who happens to be a protégé of Chef Jacques Maximin, who instructed us for an entire week at École Ducasse. Life has a funny way of closing loops like that.

For the first time in a few weeks, it was a joy to sit on the other side of the table, not as chefs cooking our own meals over seven grueling hours, but as guests. That said, once you’ve been through chef school, you never quite eat the same again. Every plate invites a quiet question: Could we do that? How would we do it? What technique did they use?
