Day 51 of 60 | Bonjour, Paris! 🇫🇷✨
On this rainy Parisian Sunday, I’m embracing a four-course menu of rest, recovery, celebration, and preparation. A perfectly balanced plate… if only my plating skills were always this balanced.
✅ Rest: Logged eight uninterrupted hours of sleep. It was deserving of a Michelin star.
✅ Recuperation: After striking out yesterday on a new, closer cold-plunge/sauna spot (closed for Christmas decorating—of all the reasons!), I’m making the hour-long pilgrimage to the only reliable one in Paris. My body shall be recovered whether it likes it or not.
✅ Celebration: Lori, Sue, Joe, and I have been invited to a classmate’s birthday. She’s a gem, so spirits will be high… and so will my sugar intake!
✅ Preparation: After the party, Lori and I shift gears into chef-supervised practice for Monday’s run-through of our final exam menu at École Ducasse. When you don’t have natural talent or years of kitchen instinct to fall back on, the way to show up well is simple: prepare, prepare, prepare—and give your absolute best effort. This has always been a winning strategy for me.
So that’s Day 51, a well-curated tasting menu of exactly what I need. Paris, carry on. 🇫🇷✨
