Vegetables became brushstrokes.

Day 39 of 60 | Bonjour, Paris! 🇫🇷✨

Now that my schedule has flipped to night school, I’ve decided to give you the director’s cut of the day before, so you don’t miss a single behind-the-scenes moment. 😎

Yesterday’s mission:

1) Pesto Kale Pizza

2) Yet. Another. Fish. Dish.

Let’s start with the fish because… we must.

I’ll spare you the gory details, but just know this: the guy who once needed 20 minutes to debone a fish is now clocking in at under two minutes flat. At this rate I’m one apron away from being illegally recruited by a French fishery. 🐟⚡️

But the real magic happened with the pizza assignment.

We started with a small “pancake” made from buckwheat and chickpea flour - humble, rustic, earthy. Then came the pesto, made from scratch, bright and fragrant. And that’s when the fun truly began.

Our instructor rolled out a rainbow of vegetables and said, “Create.” And suddenly I was no longer in cooking school… I was in art class. Plating became play. Colors became ingredients. Vegetables became brushstrokes.

Here is the final creation, part pizza, part painting, and fully the kind of joyful experiment that reminds me why I’m here doing this every day.

Every night class, every early morning, every challenge, it’s all adding up. Not just to technique, but to confidence, creativity, and the quiet pride of knowing I’m pushing myself into places I’ve never been.
