Day 27 of 60 | Bonjour, Paris! 🇫🇷✨

Nearly a month into cooking school, and today’s lineup was nothing short of magnifique. On the menu:

1️⃣ Foie Gras

2️⃣ Carpaccio de Langoustine

3️⃣ Sweetbread

Ingredients, order, timing, and technique aside - today’s real victory was artistic. I made major strides in plating. It’s funny… I’ve spent years appreciating beauty on a plate, but only now do I understand the creative alchemy behind it. Plating, it turns out, is sculpture in sauce and geometry in garnish. And with a little practice (and a lot of passion), I’m learning I can actually excel at this new art form. 🎨🍽️

My secret weapons? Two thoughtful gifts from my wife that have been absolute game-changers:

👩‍🍳 Precision chef’s tweezers (because every microgreen & flower matters), and

🥾 A pair of classic black Crocs (because comfort is the unsung hero of creativity). The school issued shors werek killing me!

Both have elevated my kitchen experience - one adds finesse, the other saves my feet & back.

At one point, I told our MasterChef that I wanted to create a new role in the kitchen brigade: The Plater. He laughed and said, “That position doesn’t exist.” I couldn’t help but smile and think — well, maybe it could… with a little imagination (and the mischievous wink of a Boss!)😉
