Day 14 of 60 | Bonjour, Paris! 🇫🇷✨
The first week at École Ducasse is complete and what a week it has been! Today’s lessons: fresh pasta from scratch and a dreamy tiramisu.
This week has been as much a test of endurance as it has been of skill. Our class of fourteen courageous dreamers comes from all corners of the world, from the U.S. and France to Switzerland, Mexico City, and across Asia. Our talented chef-instructor hails from the beautiful Caribbean island of Martinique. Together, we’re a true melting pot, a vibrant blend of cultures, perspectives, and passions.
What inspires me most is how this diverse group positively comes together each day with one shared goal: to learn, to create, and to push beyond our limits. The days are long, seven hours on our feet, physically and mentally demanding — yet every challenge brings us closer, stronger, and more determined. I must say that as a class we rise in the occasion each day and I’m proud of us for that. This ain’t easy! There are no wimps in our group! 
As the week ends, we’re beginning to find our rhythm. The road ahead is still long, but it’s becoming clearer. I’m so grateful for the leadership emerging within our group from our two local Frenchies, the mastery of our instructor, and the way every individual contributes to the magic that happens in that kitchen.
Now it’s time for a little rest and reflection and then, come Monday, we’ll be back, ready to take on the next chapter with renewed energy and a fresh spark. 💫
